I looked at the recipes, and when making sushi it only sais 'rice cooker'. So i thought id say how to cook the rice without one!
1. Put the rice in the pan you intend to cook it in (make sure it has a lid)
2. Wash the sushi rice, and fill it the pan up to a few cm over the rice. and leave to sit on the side for around 30 minutes.
3.bring to a boil over medium heat then put on a tight fitting lid. Cook on high for 1 minute, then reduce the heat to medium, and cook for another 4-5 minutes until you can see the surface of the rice, then reduce to low heat for about 10 minutes or until the water is completely absorbed. (Don't open the lid to peek!) Turn up to high heat for a few seconds to get rid of any excess moisture if necessary.
4.let it sit on the side for around 10 minutes.

p.s. You should probably stir the rice from time to time.
p.p.s. Just before you start cooking i reccomend using a few glugs of sushi vinegar -.-
